A Summer Lunch with VF

With the release of VanillaFood the Cookbook, Nilla has shared her go to lunch this holiday season. VanillaFood has been catering for the humble food lover for over 6 years, with a focus on good food, health and the environment.

“I love light, shared meals. There’s something about tasting different flavours, that all work together shared with loved ones.” said Nilla.

Here’s what Nilla suggests this summer, for an easy get together with family and friends.

“Your table setting is very important in my opinion. Garden flowers, candles, ceramics and linen napkins always feature on my table.”

To drink: your favourite bubbles (there’s always something to celebrate at this time of year), our SUMMER ICED TEAS (page 47) and nothing beats a gin and tonic on a hot summers day.

To start: AMAZING GRAZING BOARD (page 104) and seasonal fruits (cherries are my favourite).

Salads: TURMERIC ROASTED CAULIFLOWER (page 135), VEGAN KALE CAESAR WITH CHICKPEA CROUTONS (page 131), RAW VEGAN BROCCOLI (page 132)

Something wholesome: BROCCOLI PIZZA WITH NASTURTIUM PESTO AND BURRATA (page 119) and BEETROOT, GOAT FETTA AND THYME TART (page 123)

+ fresh baguette or sourdough

+ I also love smoked fish to accompany salads on a hot day

Dessert: CHOCOLATE, HAZELNUT AND ESPRESSO TORTE (page 195)
