The much anticipated VanillaFood The Cookbook has just been released. As promised just before Christmas, it’s been a long time in the making and now the VF community can make some of the most loved recipes from the cafes.

“It is a beautiful hand bound, Australian made work of art".” says Nilla, who has spent the last few months preparing for the launch.

Nilla has answered a few questions, for those who haven’t yet made the purchase. Nilla thinks it really is the perfect gift, because who doesn’t love delicious healthy food.

What can we expect from the cookbook?

Recipes from back in 2014 feature in the book, current VF recipes as well some brand new recipes.

Why did you decide to write a book?

It has been on my mind for 10 years, but it was never really the right time. 2020, with the worldwide pandemic and a lot of time away from the cafes seemed to be a good time.

Are there easy recipes for someone new to this kind of food?

All the dips in the ‘snacks’ section are quite easy and don’t take a lot of time. They are unique and healthy, but super delicious.

What is you favourite featured recipe?

The Beetroot Tart, it is a VanillaFood customer favourite and mine too.

What recipe do you recommend for a quick and easy dinner?

The Vegan Lentil Nachos is the perfect mid week meal. The ‘meat’ can be prepared ahead of time and the dish can be assembled just before serving.

Will we ever see the recipe for the Paleo Sweet Potato Muffins?

NO! Its coming with me to the grave. It is a VF signature, that I can’t see myself sharing anytime soon.

Where can I find Butterfly Pea powder, to make my favourite smoothie?

At health food stores or online, originally we were getting it direct from Thailand, but our stockist discontinued the Butterfly Pea powder.

I don’t have a garden, but I still want to grow some of my own herbs/ flowers?

In pots in the kitchen window is a good place to grow sun loving herbs, and makes them super accessible to add to any meal. Or if you have a balcony a few pots, is enough room to grow tomatoes, leafy greens and some violas.

What’s next for VanillaFood?

I am currently working on my second book, I loved the process of creating the book and shared the experience with a great team, I’m literally itching to get another one on the shelves… But first I need to get through the Christmas madness in the cafes.
