For the love of Gnocchi

If you have dined at VanillaFood you would have seen gnocchi on the menu. It’s a local favourite and definitely a top pick for staff. Since opening 18 months ago a variety of gnocchi dishes have been featured; all being gluten free (stay tuned for the new VanillaFood menu and a NEW gnocchi dish) and handmade by the guys at Noosa Gnocchi. They make seriously delicious organic gnocchi. VanillaFood and Noosa Gnocchi have shared a recipe below.

Spring Gnocchi

INGREDIENTS:

(serves 2)

1x packet of your favourite Noosa Gnocchi (pictured above is the GF sweet potato gnocchi)

3 tbsp olive oil

1/2 cup of garden peas

1 handful of baby spinach

1/2 cup of your favourite feta (Meredith Goats, Persian or a vegan alternative (VF loves coconut feta))

Fresh herbs and finger lime, to garnish

METHOD:

Heat the oil in a large saucepan and fry the gnocchi until golden and slightly crispy. Season well. Add peas and spinach and cook on low for a further minute or 2. Sprinkle feta of choice, fresh herbs and lime just before serving.

TIP: Don’t overcrowd the pan when pan frying, or the gnocchi will start to steam and get sticky.

A little bit more about Noosa Gnocchi: Filip started Handcut Deli back in 2013, wanting to supply people with an organic homemade quality gnocchi. Filip says,

“It’s my expression for simple, healthy, and good food.”

Noosa Gnocchi can be purchased at Noosa and Kawana farmers markets as well as numerous grocers on the Sunshine Coast and Brisbane. The potatoes are cooked and '“riced”, then mixed in with flour (or potato starch for their GF gnocchi), to make a dough. It is then worked by hand and rolled out. It’s hand cut into little pieces and poached in simmering water. The gnocchi gets iced, oiled, and vacuum packed, then frozen. Filip says the most popular combination is his organic potato gnocchi panfried in burnt butter and sage.

He has created an artisan product that usually takes a lot of skill to make but is now available to anyone that has basic cooking skills and a few minutes on hand.
